GIST LIST 241:365

1. Finding a deal on a free hardcover photobook!
2. Hearing from my hubby many times today. That's always good because when he's on storm we never know when he's going to call.
3. Knowing hubby shouldn't be in the storms' path.
4. Getting the kids to eat spinach and they both loved it!
5. Getting my step-dad to try my meal and he loved it too (so did my Mom!)

Here is the recipe to see if you LOVE it too!

Pierogi Lasagna

1 cup chopped onion
1 1/2 c. chopped tomato (I bought canned tomatoes)
1 16oz jar of Alfredo pasta sauce
2 pkgs. (16 oz each) pierogies, cooked and drained
1 10 oz pkg of frozen chopped spinach, thawed and squeezed dry

Preheat oven to 350 degrees. Coat 2 qt baking dish and nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add onion and 1 cup tomato, cook for 5 minutes, while stirring. Stir in sauce and 3/4 c. water. Spread 1/2 c. sauce in baking dish top with 8 pierogies, spinach, 1/2 c. sauce, remaining pierogies and sauce. Cover, bake for 25 minutes. Uncover and bake another 10 minutes. Let stand 10 minutes and top with remaining tomatoes.
