Recipe time!

The kids and I are big fans of tacos. We are also big fans of corn and peppers mixed into the tacos. I was pleasantly surprised while grocery shopping to find canned corn and peppers ~ what a fantastic, quick and easy, combination! Tuesdays are one of the many days we have a busy, rushed day, so I also like using cubed, fully cooked chicken. Oscar Meyer has a product that works perfectly for that. Deli Fresh Southwestern Chicken Strips. Here is the recipe we can up with last night.

You will need:
Oscar Meyer Deli Fresh Southwestern Chicken Strips
Canned corn & peppers
Wheat tortillas
Sour Cream
Lettuce
Shredded Cheese
Whatever else you like to put on tacos

I cube the chicken and pan fry them for a few minutes, just to get them warm. Cook the corn and peppers. With tortilla I put them on a plate, wet a paper towel and cover the tortillas and microwave them for 30 seconds. This keeps them from ripping when you fold them.
Viola, quick and easy and very nutritious. Nothing fancy at all, but really very good!
