I get a lot of people telling me that I'm such a strong woman because my husband travels so much. I think people need to be telling him that he's the strong one. He's the one that has to travel AWAY from home, family, and friends. He travels away from everything familiar to him. His work days consists of 10 hours or more and it's all outside, in the extreme cold and the extreme heat. This line of work takes him to some not so nice places all over the U.S. Granted this line of work has also shown him some really beautiful parts of the U.S. as well.
I'm so very proud of the work that he does and how strong and dedicated he is to this line of work. It's the only job he's ever had that he doesn't complain about the hours, the work, the temperature, etc. None of us enjoy the fact that he's gone so much. He has to miss out on a lot and we have to miss out on a lot of him as well.
So instead of saying that I'm the strong one, let me just say that WE are all strong. We each make this situation work the best way we can, together we will all get through this.
Okay, now onto the recipe. Our family really enjoys Mexican food and this is one of our favorite ones to make.
Burrito Bake
1 lb. hamburger (you could use shredded chicken too)
taco seasoning
3/4 c. water
12 tortillas
1 can (16 oz) refried beans
1 c. shredded cheese
Diced tomatoes (optional)
Preheat oven to 350. Brown meat, drain. Add seasoning mix and water, bring to a boil. Reduce heat to low, simmer 10 minutes stirring occasionally.
Place 4 tortillas on bottom of greased 9 inch pie plate. Cover with 1/2 of the beans, 1/2 of the meat, 1/2 the cheese, and 1/2 the tomatoes (optional). Repeat layers once. Top with remaining 4 tortillas.
Bake for 30 minutes and cut into wedges. So yummy!

You all are very strong, I wish our family was more like yours. Our lives seem very stressful with John's line of work and my no-work.
